Quick info
About New Wave Ramen
New Wave Ramen is a ramen restaurant and bar at 16 Tib Ln in Manchester, serving bowls built on Tokyo's new wave ramen styles. The kitchen makes its noodles by hand and salt-cures the collar chashu overnight before cooking it sous vide. The OG Paitan is made with a creamy chicken broth, and the Lamb TanTanMen sits beside it on the ramen list. Kushiyaki, small plates such as gyoza, and cocktails round out the menu for diners who want more than a bowl. The restaurant opens Tuesday to Sunday and closes on Mondays.

Customer Review Summary
Reviewers center on the creamy chicken paitan broth, with the OG Paitan, the Shio Yuzu and the Lamb TanTanMen named as standouts, and several call it the closest thing to authentic Japanese ramen they have found in Manchester. Close behind are the house-made noodles, described as tender with a good bite, and the generous portions. One diner adds that the collar chashu is salt cured overnight and sous vide. The Namban chicken with tartar sauce and the steak skewers also draw praise, and the servers are repeatedly called friendly and warm. Complaints are smaller but specific. The gyoza were underwhelming on one return visit, the tori kaarage struck another reviewer as a bit too dry, and one wished the noodles were chewier. The four-top tables feel cramped to one diner, and the bar chairs are wonky and hard to balance on for another. One reviewer found prices on the higher end, and another suggests booking ahead at weekends. One diner closes on the ice tea, a cold brew made from loose leaf Japanese tea.

“Tried the Shio Yuzu and I have to say this broth is 1 of 1! Complex and exploding with Chicken flavor. I do wish the noodles were slightly chewier but that’s just my personal preference… As a ramen lover and someone who frequents Japan regularly, New Wave is on par with some of best I’ve ever had. Cannot recommend enough”

“This is probably the best ramen I’ve ever had in the UK! They offer a fantastic £15 ramen lunch deal, and the portion sizes are generous. The ramen noodles are incredibly tender – the perfect texture for ramen! The four-top seating is a bit cramped, but the food is absolutely delicious :) The service is also great! 💖”

“Insanely good food. We came here for lunch and this is probably the best ramen either of us have ever had. So flavourful, big portions. We had the OG Paitan and the gyozas and both were incredible. The two people who served us were super friendly and helpful as well. Will 100% be back but prepare for a food coma”

“Nice food nice service especially the nice staff from Malaysia (The one looks like Japanese) For Asian like me, sitting in high chair would be a little bit difficult. Highly recommend for their ice tea. Their tea base taste like Taiwanese Wu Long tea. Thanks for the Malaysian staff (sorry I didn’t ask your name) show me those loose leaf tea come from Japan and using cold blew to make this wonderful drink. Very impressive indeed !”

“The best ramen I've had in Manchester. It's very close to the Japanese authentic ramen. Apps are also extremely tasty, again as tasty as I've had them in Japan. Amazing service all around as well. Special props to James and Chun for taking care of us.”
