About A Taste of China (三秦百味)
A Taste of China (三秦百味) is a Chinese noodle restaurant in Oxford, with its address on Market St and its spot in a nook at the north end of the Covered Market. Founded in 2015, it moved into the market in 2017 and specialises in Shaanxi cooking, led by hand-pulled Biang Biang noodles made fresh, with the cooks seen making them. The stewed noodles with beef come with a choice of medium or spicy, and the chicken gyozas can be served with soy sauce and chili oil. Seating is limited to a few small tables, and benches in the centre of the market give extra room for eating. Card is accepted for larger totals and cash for smaller orders. The restaurant opens in the daytime and closes on Wednesdays.

Customer Review Summary
The house special stewed noodles with beef draw the most praise, with reviewers describing tender beef, a rich broth and chewy hand-pulled noodles, and one regular who returns every couple of weeks says to ask for it spicy. Close behind are the hot and dry noodles, the chicken gyozas, the cold noodles, and braised beef or pork with rice, and one reviewer compares the beef noodles to what they ate in Shanghai. Several call the food authentic and mention friendly staff. Portions and value split opinion. One reviewer says the stewed noodle soup was a bit too salty with only a few slices of meat, another found the biang biang noodles overcooked and short on flavour, and one says the portions are too small to count as a meal. One diner was charged extra to add meat to both dishes and received six small cubes. Seating is limited to a few tables, so most reviewers take their food away, and one suggests asking for soy sauce and chili oil with the gyozas.

“Decent, peanuts were good. Less meaty but broth was good.”

“Looks unassuming from the outside but WOW! You must come to covered market in Oxford to get a true taste of China! 😜 Chicken gyozas are some of the best I’ve ever had (pro tip: ask for soy sauce and chili oil, thank me later😏) The hot and dry noodles are life changing. Staff are friendly. Limited seating but you can order to go.”

“The food there was delicious! We ordered the cold noodles and the house special noodles, it was perfect! The owner was nice with us! The noodle seemed to be fresh pasta and were very tasty!”

“The food actually tastes good, very original. However, the quantity is too little either by British or Chinese standards. If you expect a meal, you shall order at least two shares for one person.”

“I wish I could gatekeep this place because it is simply *that* good, but it deserves to be celebrated. I stumbled across this restaurant by chance when I first moved to Oxford, and I've been returning every couple of weeks since. This is something I've never done with any other restaurant. I've nearly worked my way through the entire menu, and my absolute favorite is the **house special stewed noodles with beef**. When they ask if you want it spicy, say yes and thank me later. The spice level is perfect. It has enough heat to elevate everything without overwhelming your palate. The hand-pulled noodles are deliciously chewy with that perfect texture you only get from proper technique. The beef is so tender it falls apart at the touch of your chopsticks, and the broth? Absolutely heavenly. Rich, complex, with layers of flavor that only come from hours of careful preparation. This is authentic Chinese cuisine at its best. No compromises, no shortcuts, just exceptional food made with genuine skill and care. Every dish I've tried has been outstanding, but that bowl of stewed noodles keeps me coming back. If there's one place in Oxford you should eat at, let it be this one. You won't regret it.”
