Mannequin is Orin Swift's manifestation of Californian Chardonnay, with fruit sourced from vineyards across the state of California from Russian River Valley, Atlas Peak and Santa Maria Valley. It's big and buttery.

Made with specially selected dessert apples using precise wine-making techniques and slowly cold fermented in their cellar. The result is a super-fresh elegant, still cyder; you can expect ripe pear, melon and almond on the nose, with a crisp taste of apple and lemon.

It's cyder, but not as you know it. Just in from Greg and the team in the Cyder Cellar is a rich and super sweet Ice Cyder, perfect with pudding or a wedge of Westcombe cheddar. It's comparable to a fine dessert wine, with a lovely fresh note of citrus on the nose and palate. Originating from Canada, Ice Cyder is made by pressing apples while they are still frozen. The water from the apples turns to ice and is separated, leaving only the intense, syrup-like juice behind. Having been inspired by this technique, the team have recreated the same freezing conditions on the estate by storing their freshly pressed apple juice at -25°C for a minimum of five weeks. The sweet, naturally concentrated syrup is then cold fermented in their cellar and aged in steel tanks for a further six months, before it's bottled and ready to drink.

“An imperial pint is an ideal size for a man like me. It's enough for two at lunch and one at dinner. The apples that went into the making of this special sip were picked and pressed in 2018, before being fermented in our cellar by Head Cyder Maker Paul Ross, and laid down in bottle for two years. The result? A vibrant cyder with a pale straw colour and fine mousse. Candy, brioche and custard apple on the nose, with lychee, mango and crisp apple to taste.

This small-batch apple gin distilled in Somerset makes for a refreshing garden drink. It's crafted with apple juice straight from the press and flavoured with botanicals from their gardens. Pairs perfectly with our Rosemary & Mint Tonic for a refreshing, herbaceous drink with natural flavours of rosemary, mint and yuzu. and good length.

GREECE A bright gold-yellow colour with pronounced aromas of citrus, aromatic herbs, tropical fruits and jasmine. The body is full and smooth with a crisp, dry finish.

SPAIN Aromas of tropical fruit, green apple, banana and melon. Initially soft on the palate, with a pleasing acidity, which develops into a harmony of fruit dominated by peach.

SPAIN Star bright, pale yellow colour. Tropical notes and barrel ageing. Good body and an elegant finish.

NEW ZEALAND This medium bodied wine showcases fresh citrus (lemon, lime and grapefruit) layered with gooseberry and hints of melon.

ITALY Aromatic, with notes with apple and peach. On the palate the wine is textural with layers of orchard fruit, spice and fresh citrus acidity.

AUSTRALIA Refreshingly unoaked, citrus and white peach flavours combine with a zesty fresh acidity and a clean, bright finish.

FRANCE Delicate apricot, peach and exotic fruit notes with a hint of honeysuckle. Vibrant and well-balanced, with refreshing finish.

FRANCE White wine worked with very mineral notes of pierre à Fusil, rounder in the mouth than the compère, more intense with a nice length on the palate and a nice balance.
