This deluxe cheddar is made from the milk of cows that graze in west dorset. Aged for 12 months in thick black wax, the cheese has an intense, rich flavour, not to mention a satisfyingly crumbly texture.

This subtle tangy blue has a wonderfully light, melt -in-the-mouth creaminess and is made from unpasteurized hand skimmed milk.

This mould ripened cheese is firm, rich and creamy when young, softening with mushroomy notes and a chicory finish with age.

Rosary is a creamy and fresh goats cheese, with a natural acidity and a mousse like texture, the edible ash coating comes from purified burnt coconut shells.
