About Franklin Barbecue
Franklin Barbecue is a barbecue restaurant in Austin, at 900 E 11th St, where long lines form early for brisket, pulled pork, and other smoked meats. Much of its identity comes from the central role of brisket, which anchors the menu and draws guests to this bustling spot. The signature plate is Brisket, paired with sausage links, turkey breast, and pork ribs, while Franklin BBQ and Pecan Pie round out the menu as popular mains. Dining works on a first-come basis, with guests often arriving ahead of opening to secure their place in line. Pecan Pie offers a grounded dessert option that complements the smoked-meat focus.

Customer Review Summary
Franklin Barbecue's brisket stands at the heart of nearly every review, described repeatedly as moist, tender, and melt-in-your-mouth, with the espresso BBQ sauce and jalapeño cheddar sausage close behind as frequently praised staples. Diners consistently single out the pork ribs and beef rib as highlights, and the free bread, pickles, onions, and sauce setup earns repeated appreciation. The long wait, often two to three hours, is the dominant caveat across reviews, though many note that staff walk the line giving wait estimates and soft orders, and that the doors open early so guests can use the restrooms and grab drinks while waiting. A few reviewers found the meat too salty, particularly the pork ribs, and several describe the sides as mediocre or just okay. Those looking to skip the line mention the to-go option with a five-pound meat minimum, and several suggest arriving well before opening to secure a manageable wait.

“The brisket was moist, tender, and flavorful same as the pork ribs. The sides were mediocre but the flavor of the meats make up for it. The service was incredible and we were given a huge cup of their expreso BBQ sauce to go along with 1 extra rib left over.”

“I waited for over 3 hours to try the barbecue, which is said to be the most famous in Austin... The weather was so humid that it was hard to endure while waiting, but I endured it because I didn't think I would get another chance. In my personal opinion, it was too salty for my taste, so the restaurant I ate at elsewhere a few days ago tasted more delicious. Especially the pork ribs were so salty that it was hard to eat without water throughout. I think the reason it's popular among Americans is because it's stimulating. Of course, the quality and cooking of the meat were truly perfect. It was worth coming and experiencing at least once, but if I have to wait the same next time, I think I'll go somewhere else. For your information, the sausage was wonderful for me.”

“Brother and I came to Austin to eat and Franklin was our first stop. Didn’t have time to wait so we pre ordered the minimum five pounds of meat. Ended up finding some people to share with and none of the food was wasted. Can’t imagine brisket getting any better than this. Moist, tender, melt in your mouth perfection. Ribs may have been the best I’ve had as well. Pulled pork was nothing special until we put their vinegar bbq sauce on it and it was delicious. Sausage was good, but not great. Turkey was tender and very flavorful. Key lime tart was decent. The only side we tried was the potato salad which was refreshing as it had a nice mustard flavor. If you like bbq this is a must try. I can only assume that the people who talk bad about this place either don’t know bbq or just like to be mean.”

“Excellent! The BBQ does have a heavy vinegar taste compared to a sweeter style like stubbs. We were able to try the Tipsy Texan all the way - it was perfect! Brisket was great and sausage was really good. They only have 3 sides potato salad was was a good southern yellow kind.”

“Brisket was good. Cheddar Jalapeno sausage was good. Pork ribs were the best I've ever had in my entire 50yrs of being alive!! Pulled pork was just okay. The beans were really good, but the other sides were just okay.”
